Oleocanthal contained in medical olive oil prevents the production of pro-inflammatory COX-1 and COX-2 enzymes – the same way ibuprofen works. In 2018, the structure of (E)-elenolide, a previously unreported ingredient of olive oil, was determined after isolation and completely characterized by 1D and 2D NMR and mass spectrometry. For the first time, significantly improved brain performance in humans was linked to high phenolic olive oils rich in oleocanthal and oleacein10. To date, there is no other study that has examined in such detail the effects of extra virgin olive oil on the elderly with Mild Cognitive Impairment as an effective solution for cognitive impairment” said Prof. Magda Tsolaki, Professor at the Aristotle University of Thessaloniki.
